This is a recipe from my vegetarian cooking course and the participants loved it. I was inspired by a recipe by Attila Hildmann from his book "Vegan for fit", but I modified it a little.
Personally, I'm not necessarily in favor of eating too much tofu. But it is a good source of protein from time to time. Incidentally, this recipe is also suitable for tofu haters who think they don't like tofu. The secret is the spices, then tofu tastes really delicious.more
Ingredients for 2 people
200g tofu
1 onion (can be omitted)
Optional: vegetables such as zucchinis, peppers, cherry tomatoes, cucumber, carrots
Optional: Smoked tofu
1 tbsp coconut oil (or ghee if it doesn't have to be vegan)
½ tsp turmeric
2 tbsp water
1 tbsp almond butter
Sea salt
Freshly ground pepper
Herbs to garnish
Preparation
Crumble the tofu with a fork. Finely dice the onion.
Heat the fat in a pan and fry the tofu with the turmeric for approx. 3 minutes.
In the meantime, mix the water and almond butter well and then add to the tofu. Season with salt and pepper.
You can also fry zucchini, peppers, smoked tofu (to add some bacon flavor), depending on what you like! Or simply serve with some vegetables, such as cherry tomatoes, cucumber or carrots.
Garnish with herbs (chives, parsley or dill work well) and serve with some wholemeal bread if you like.
