Chia pudding with coconut and mango

Some of you may have already noticed that I like chia seeds:-) I'm also currently working on the topic of eating less sugar. And that goes very well with my recipe idea for chia pudding for you.

As chia seeds also keep blood sugar levels low, they make a great healthy breakfast because they keep you full for a long time. However, you can also use the recipe for an afternoon snack or as a healthy dessert.

Today I would like to introduce you to the basic recipe for chia pudding and then refine it with mango and coconut. You can vary the basic recipe wonderfully - with different types of plant-based milk, juices, fruit and spices.

Recipe for chia pudding with coconut and mango

Chia Mango Pudding

Ingredients for 2 portions


4dl

organic coconut milk (alternatively almond milk, oat milk etc.)
30g chia seeds

1

msp. real ground bourbon vanilla and 1/3 tsp. ground cinnamon

For the topping:

1

ripe mango

tbsp. lemon juice

1

tsp. sesame seeds


Preparation

  1. Mix the coconut milk and spices well. Leave the chia seeds to soak in the spiced coconut milk overnight or for at least a few hours. Stir a few times with a whisk at the beginning so that no lumps form and make sure that all the seeds are well "wetted".
  2. Peel the mango and remove the stone. Puree half of the mango with a little lemon juice. Cut the remaining mango into small cubes and add to the puree.
  3. Serve the chia pudding in a nice glass and spoon the mango decoratively over the top. Sprinkle with sesame seeds and your chia pudding is ready.


In my opinion, it is sweet enough as it is because the coconut milk already tastes sweet and the mango is also very sweet (if it is really ripe!). The cinnamon and vanilla also contribute to the sweet taste. If you like it even sweeter, you can also mix 1 tablespoon of maple syrup into the chia pudding.
