Especially in summer when it's warm, a cooling raw vegetable recipe is just what you need! In my cooking course for beginners, I once demonstrated a raw vegetable salad that was very well received by everyone, including vegans. I got the recipe from my Thermomix consultant Antonella, it really is extremely delicious and can be made in 5 minutes!
The salad is perfect as a side dish for a barbecue or as lunch in the office.
Refreshing raw vegetable salad
Ingredients (for 1-2 people)
½ chopped apple
1/2 chopped red pepper
130 g chopped broccoli or cauliflower (or half broccoli, half cauliflower)
1 tbsp pine nuts
2 tbsp olive oil
1 tbsp apple cider vinegar
½ tsp maple syrup
1 tsp mustard
1 tsp salt, possibly a pinch of pepper
Preparation
Chop everything together in a food processor or Thermomix for approx. 5 seconds. Make sure you don't blend for too long, otherwise it will turn into a sauce. If you like, you can also add coriander leaves.
And the delicious raw vegetable salad is ready.
