Quinoa salad recipe - vegan and raw food

After my last raw food salad recipe, here is another raw food recipe from Jana Gemperle / Raw Food by Jana, this time with quinoa.

This salad is quick to prepare, perfect to take with you and helps you get over the afternoon slump. Thanks to the sprouted quinoa, this salad is super filling and gives us energy for a productive afternoon.

Quinoa salad recipe


What you need:
A large glass jar with a lid

Ingredients

for the salad dressing:


6 halves sun-dried tomatoes - soaked for an hour or overnight
10 basil leaves
7 tbsp water, preferably use the soaking water from the tomatoes
1 fresh tomato, quartered
1 tbsp olive oil
1 tbsp lemon juice, freshly squeezed
¼ tsp herb salt
pepper - to taste

Place all the ingredients in a blender and blend until a creamy, thick dressing is formed.

For the salad:


Rinse 80 g sprouted quinoa grains well under running water, then soak in plenty of water for 8 - 14 hours. Pour away the soaking water and rinse the quinoa well again and drain.
½ red bell pepper, diced
¼ cucumber, cut into rings
2 tbsp nutritional yeast, e.g. from Dr. Ritter, available from health food stores
some olives
lettuce, as much as you have space for
sprouts, e.g. alfalfa

Preparation

Put the ingredients in a large jar with a suitable lid in the following order:
salad dressing, quinoa, cucumber, red bell pepper, olives, yeast, lettuce, sprouts.
As soon as you get hungry, shake the jar vigorously to distribute the dressing. The salad can be eaten straight from the jar.
The "unshaken" salad will keep in the fridge for 2 days.
