In our part of the world, breakfast is often more like a dessert than a healthy start to the day.
I keep hearing the question: what should I even eat for breakfast if I want to eat as little sugar and carbohydrates as possible?
In my search for new inspiration, I came across a crunchy muesli and tried it out straight away. Many people really like crunchy muesli, but I don't normally recommend it because the ready-made ones often contain hydrogenated fats (and lots of sugar, of course). But homemade is of course something else.more
Gluten-free cocoa crunchy muesli without sugar
Ingredients for one baking tray
70g coconut chips (crush a little with your hands)
150g roughly chopped nuts (I used hazelnuts, walnuts, pine nuts, almonds and pistachios)
10g chia seeds
1/2 teaspoon cinnamon (you can also leave it out)
50g coconut oil, melted in a bain-marie
4 teaspoons / 20g cocoa powder
10g cocoa nibs
Preparation
1. mix everything together and spread on a baking tray lined with baking paper
2. Bake in an oven preheated to 120 degrees for about 30 minutes (keep an eye on the oven and check on it from time to time! It shouldn't get too dark, of course. But the longer you bake it, the crispier it will be!) After approx. 15 minutes, use a spatula to mix / turn everything once.
3. Then leave to cool and only pour into a screw-top jar when completely cooled. The muesli will keep for about 2 weeks, even longer in the freezer.
I started with this quantity and think it is ideal for a baking tray. If you like the muesli and want to make more, simply double the quantities!
Serving suggestion (1 portion)
Place 150g natural yoghurt, Greek yoghurt, sheep's or goat's yoghurt or even coconut yoghurt in a glass or small bowl
Add 2-3 tablespoons of muesli
Finish with 2 tablespoons of pomegranate seeds
Personally, I don't need any sugar in this muesli, but if you or a family member are sensitive to the slightly bitter taste of cocoa, you can also mix a little maple syrup into the finished muesli. Or simply leave the cocoa out of the muesli mix completely.
