The right soup for a detox diet
I have had a very similar experience with a detox cure to many readers. You get so much energy, it's really amazing. But you really have to experience this yourself, you can't "tell" people about it ;-)
I would like to introduce you to the soup from this cure, which has now become one of my favorite soups. It's super easy to make and extremely tasty. The kick here is definitely the lemon juice, without it it tastes boring.
Detox soup with red lentils
Ingredients (for 2 people):
2 teaspoons coconut oil
1 small onion, finely diced
1 stalk celery, finely diced
4 garlic cloves, peeled and diced
3/4 teaspoon ginger, peeled and finely diced
1 1/4 teaspoons ground cumin
1/2 teaspoon turmeric
3/4 cup tomatoes, chopped
2 cups vegetable stock (it's best to make your own stock, of course)
3/4 cup red lentils, washed and drained
1 cup fresh spinach (stuff well into the cup)
1 tablespoon fresh lemon juice
fresh chili to taste
for on top (if you like):
2 tablespoons fresh coriander, finely chopped
1/2 avocado, cut into pieces
Preparation:
- Melt the coconut oil in a saucepan, then add the onion and celery. Sauté for 5-10 minutes over a low heat until the onion is translucent. Then add the garlic and ginger and fry for a further minute, stirring constantly.
- Add the cumin and turmeric and stir for a further 30 seconds, then add the tomatoes.
- Now add the vegetable stock and the lentils (plus the chili, if using) to the pan, reduce the heat and cook for approx. 20-30 minutes (or until the lentils are soft).
- Finally, add the spinach and lemon juice and season to taste with salt and pepper.
- To serve, pour the soup into plates and only now add the avocado and coriander on top.
