Today I have a lovely guest recipe for you! It's from Anna-Lena Leber from Urgesund. The idea for this guest recipe came about because Anna-Lena and I were talking about creativity and photography/painting on Instagram.Anna-Lena and I have a lot in common, so I'm delighted to be able to share one of her recipes with you today.
Vegetables as ice cream - perfect for warm summer days
I am particularly fascinated by how versatile vegetables are, even in sweet dishes. Like here with cucumber and mint ice cream.
As well as being super refreshing, it is also good for our health. Cucumbers are full of good nutrients and antioxidants and have a positive effect on our fluid balance. Which is particularly important on warm days.
So why resort to synthetic water ice with tons of sugar? When ice cream can be so healthy and delicious! Your body will be delighted and so will your taste buds. Preparation is just as quick and easy. That's very important to me with all my recipes. To show that healthy eating is by no means complicated or time-consuming!
Recipe for cucumber and mint ice cream
Ingredients:
1,200 g cucumber - peeled
3 limes - juice
20 g mint - chopped
5 tbsp maple syrup
Preparation:
Peel and puree the cucumbers. Then strain through a nut milk bag to obtain the pure cucumber juice.
Add the juice of 3 limes.
Roughly chop the mint and add to the mixture, along with 5 tbsp maple syrup. Stir the mixture well and then pour into the ice cream molds.
The freezer will do the rest! Your summer treat is ready! Simple, quick and really healthy!
