Cauliflower rice with dukkah

I tried this recipe idea and loved it. Today I have refined the recipe a little, so it tastes really delicious! Another big advantage of cauliflower rice over real rice is the time factor. Cooking rice takes about 20 minutes, cauliflower rice only takes 5 minutes.

How to prepare the cauliflower rice

Ingredients (for 2 people):


1 small cauliflower
2 medium-sized onions
2 teaspoons of ghee or coconut oil
2 teaspoons of dukkah (you can also substitute with curry or cumin or other spices)
a little salt

Preparation:

Wash the cauliflower, remove the leaves and cut into large pieces. Chop to the size of rice grains in a food processor or multi-chopper*. Cut the onions into rings.

Melt the ghee or coconut oil in a frying pan over a medium heat. Add the onion rings and fry until the onions are golden brown. If you like, you can season the onions with a pinch of salt. Remove the onions from the pan and cook the cauliflower with the dukkah spice for 5 minutes, stirring occasionally. Add the onions. Season to taste and add a little more salt if necessary.

This cauliflower rice goes well with salmon or strips of beef, but can of course also be combined with vegetarian dishes such as a lentil or chickpea stew.
