Brussels sprouts - a fall and winter vegetable
The official season for this fall and winter vegetable is from September to January. As Brussels sprouts only have a short shelf life, you should buy them as fresh as possible (make sure the leaves are green and not yellowish) and store them in the vegetable drawer of the fridge for a maximum of 4 days. To prepare it properly, you should cut back the stalks and remove the outer leaves, and then wash the florets with a little salted water. You can also skip the part with the salt water, it's not absolutely necessary.
Brussels sprouts from the oven - delicious roasted
Ingredients (for 2 people):
500g Brussels sprouts
1-2 tablespoons olive oil
approx. 1/2 teaspoon salt
a little pepper
Preparation:
- Preheat the oven to 205 degrees.
- Clean the Brussels sprouts (wash, cut away the stalk and remove the outer leaves) and cut in half.
- Place the Brussels sprouts in an ovenproof dish and mix well with olive oil, season with salt and pepper.
- Bake in the oven for approx. 15-20 minutes until the Brussels sprouts are brown and slightly crispy. Stir once halfway through if necessary.
I served the Brussels sprouts with a lemony avocado mousse and hummus for the protein, but this would also go very well with meat or fish. By the way: we also show you how to make your own hummus.
Did you know that Brussels sprouts are the buds of a cabbage? That's why they are also called "Brussels sprouts" in English. If you don't like the slightly bitter taste, wait until the Brussels sprouts are frozen, similar to kale. Freezing boosts the sugar production of the vegetable and makes it taste less bitter.
